Swede and Potato Fries
Simple dish, simple explanation. A tasty side to a burger or something like that.
Ingredients
- 4 Potatoes
- 2 Swedes
- 1 Lime
- 1 teaspoon of fennel seeds, roughly ground
- Fresh Parmesan Cheese, microplaned into a parmesan snow.
- Olive Oil
- Salt
- Pepper
Method
Peel and slice the potatoes and swedes into chips.
Boil a pot of water and salt it well. Take handfuls of the chips, boil them for about two minutes per batch, and move to an oven tray to cool. Repeat the process until they're all done, and then put the tray in the freezer for 5 minutes.
Preheat the oven to 180 C. Once it's preheated, toss the chilled fries in extra virgin olive oil and dust will salt. Move to the oven. 180 C won't brown them too much - so cook until they begin to soften. Once you can easily put a fork through them, ramp up the heat to 200 C. This will give them a nice browning.
Once brown, remove from the oven, dust with parmesan, the fennel seeds, salt, pepper, and a squeeze of lime. Serve,
