Pork and Prawn Tacos
The last recipe I wrote was a whopper. Gnocchi is no small process. Now, tacos are a decidedly easier recipe to write, and easy to cook too! These ones are pulled pork and prawn with a simple lime and red cabbage salad and mayonnaise infused with smoked spicy paprika all on a tortilla of your choice.
Ingredients (makes 15 tacos)
1.5kg Pork Shoulder Roast, skin removed with a generous cap of fat for crackling
1/4 Cup White Wine Vinegar
1 Bulb of Garlic, Peeled and minced
2 Large Onions, finely chopped
2 Tomatoes, chopped
2 Scotch Bonnet Chillies or other of similar heat, chopped with seeds
2 Teaspoons Marjoram
3 Teaspoons Paprika
Prawn meat
1/4 Red Cabbage, finely sliced
1 Bunch of Coriander
1/4 Cup Lime Juice
Soft shell taco tortillas, flour or corn
Whole Egg Mayonnaise
Spicy Pimenton
2 Limes
Olive oil
Salt/Pepper
Method
In a large pot, brown the shoulder roast in olive oil on a medium heat. Add the vinegar, tomatoes onion, garlic, chillies, marjoram and paprika. Once the onions are soft, cover with water and put the lid on. Cook for four hours until falling apart, or, buy a pressure cooker and do it in an hour.
With the skin, oil both sides, salt and put in an oven at 200 C, skin side down on a high rack. Roast for 25 minutes at 200, then flip it over and increase the heat to 225 until the skin is completely blistered and crispy. Take it out and cut into strips for serving.
In a frying pan, wilt the finely sliced cabbage in the lime juice with a generous dousing of salt. It will pop with a vibrant pink. Once all the liquid from the lime juice has evaporated, it's done. Let it cool and then toss with fresh, delicate stalks of coriander.
Take three or four tablespoons of the mayonnaise and mix with 1 teaspoon of spicy pimenton. It'll turn a brilliant red. That's your sauce.
After the salad and sauce and crackling, we're just waiting on the pork. After the four hours, take off the lid and reduce the sauce until it is thick. Taste, and salt. Add a generous amount of pepper.
Grill the prawns in the frying pan with a little oil before serving. Serve as above with pulled pork on the bottom, prawns, salad, sauce and then crackling. Squeeze a bit of lime over top. Delicious.
